Olive Oil is graded by type and quality according to strict standards set by the International Olive Council (IOC).  Consumers need to be confident that they are getting what they paid for, and can confidently understand the product they take home.  In Australia, there are additional regulations that affect olive oil products beyond grading and testing.  Distributors and producers wishing to sell olive oil in Australia are individually responsible for understanding the grading of olive oil well as well as other legal obligations related to this product.
